Chicken Parmesan Meatloaf

Mellow man loves Chicken Parmesan.  I don’t know exactly where it ranks, but I’m guessing that it’s in his top ten favorite meals.  I have a great crockpot version of Chicken Parm, and while my wonderful Mother-In-Law visited before Thanksgiving, she made a no-recipe version of Chicken Parm for Mellow Man to enjoy.  While we were cooking together, she asked me if I had ever made Chicken Parm meatloaf.  She mentioned that she had seen the recipe somewhere, and it combined the ingredients of a traditional meatloaf with those of Chicken Parmesan.  While meal planning on Monday, I thought, “Why not give it a shot?!” so I pulled out my tried-and-true meat loaf recipe and started tinkering with it.  I knew that I’d need to add Parmesan and Mozzarella cheese, marinara sauce and switch up the seasoning, but it wasn’t too hard to make my own Chicken Parmesan Meatloaf.  Mellow Man liked it, but the Big One shared that it tasted like regular ol’ meat loaf (which is NOT his favorite).  My poor little Monkey is still sick and not eating much, but he had one bite.

Chicken Parm Meatloaf

Here’s my recipe:

  • 1 pound ground chicken
  • 1 egg, lightly beaten
  • 3/8 cup Italian bread crumbs (You could probably go up to 1/2 half, but the consistency looked right to me at 3/8)
  • 1/2 freshly and finely grated Parmesan cheese
  • 2 teaspoons Italian seasoning
  • 2 cloves finely minced garlic
  • 1/2  cup chopped onion.  (I only use a sweet onion, but you could use a white or yellow onion if you prefer. Also, I like a lot of onion in my meatloaf, but if you like less onion, use less!)
  • Marinara sauce to top meatloaf
  • Shredded mozzarella cheese to top meatloaf

Prepare your meatloaf just as you would prep a traditional meatloaf.  Mix the egg, ground chicken and breadcrumbs together in a large bowl.  Add the Parmesan cheese, Italian seasoning, garlic and onion.  Mix well.  Now, if you put your meatloaf into a loaf pan, do it now.  Personally, I shape mine into a loaf and then put it on a broiling pan to cook, so that any grease drains away.  However, this dish has almost no grease, so it isn’t really necessary.

Chicken Parm Meatloaf

Put in the oven at 350 degree for an hour.  After 30-40 minutes of cooking, open the oven, and cover the top of the loaf with marinara sauce and shredded mozzarella.  I cooked up some pasta and extra marinara, just like I would do if I served Chicken Parmesan.  (I serve Mashed Potatoes with my traditional meatloaf.)
