This summer we went to visit my mother-in-law in Florida, and spend a little time with Mellow Man’s family. While I was down there, she told me that Peanut Butter Blossom cookies were Mellow Man’s favorite cookies. I had no idea. Up until that point, I assumed that he generally liked all cookies, and he had generally eaten Gingerbread Men and Chocolate Chip cookies. I asked him if he liked Peanut Butter Blossoms, and he said that he did. He went on to explain that they weren’t his very favorite, but they were the cookies that he grew up with. I thought I’d spice the cookies up with dark chocolate Hershey’s Kisses, rather than the regular Hershey kisses.
I’m sure that you have your favorite Peanut Butter cookie recipe, but here’s the recipe that I used:
- 1 Stick Unsalted Butter (1/2 Cup)
- 1/2 Cup Peanut Butter
- 1 Cup Light Brown Sugar
- 1 Tbsp Honey
- 1/2 Tsp Baking Soda
- 1/2 Tsp Baking Powder
- 1 Egg
- 1 Tsp Vanilla
- 1 1/2 Cup Flour
- 1/4 cup granulated sugar for rolling dough in
- Approximately 40 Special Dark Hershey’s Kisses
I first creamed the butter, and then added the Peanut Butter in. Once the mixture was well blended, I added the brown sugar and honey into the mixer and creamed until smooth. I then added the baking soda, baking powder, followed by the egg and vanilla. Once everything was smooth and creamy, I slowly added in the flour, 1/4 of a cup at a time. I then rolled the dough into balls about one inch in diameter, and covered them in granulated sugar. Finally, I put the balls on the cookie sheet and put a Special Dark Kiss in the middle.
