Well move on over Valentine’s Day, it’s time to get in the spirit of St. Patrick’s Day. Yes, just one short month from today is that jolliest of Irish holidays, St. Patrick’s day. To help everyone get their Irish on, I’m going to share with you a recipe that is much like eating a frozen thin mint pie. It’s called Grasshopper Pie, and I’m sure that there are a number of variations of this recipe. The one I’m going to share with you today includes a bit of alcohol in the recipe that’s from Creme de Menthe and Creme de Cacao. I will try to include suggestions to make the non alcoholic version of the recipe in case the traditional Grasshopper pie ingredients need to be modified for your family.
Ingredients for Grasshopper Pie:
- 1 Oreo Cookie Pie Crust
- 7.5 oz jar of Marshmallow Fluff
- 3/4 cup Whole Milk
- 1/4 cup green Creme de Menthe (you can exclude this ingredient, but you’ll need to add more Peppermint Extract and green food coloring.)
- 1/2 tsp Peppermint Extract
- 2 Tbsp clear or white Creme de Cacao (a suggested non alcoholic substitution can be found here.)
- 8 drops green food coloring
- 1 cup Heavy Cream
- Junior Mints
This pie takes only about 20 minutes to prepare, but you’ll need to let it freeze for a good, long while, so don’t rush the process! Make sure that you give yourself overnight or most of the day before serving up this pie. It is easier to handle and better to eat if it’s well frozen.
Start by heating the whole milk in a sauce pan. Add the marshmallow fluff to the milk and stir. And stir, and stir, until it’s well blended and creamy. It will get a bit frothy.
Once the mixture is well blended and smooth, remove the mixture from the heat, and allow it to cool until it is just slightly warm. While you are allowing the mixture to cool, whip the cream until it is whipped into stiff peaks, and set it aside.
Add in the Creme de Menthe, peppermint extract and Creme de Cacao to the marshmallow fluff/milk mixture, and then add in green food color. I like the color with 8 drops, but you might like more of less. Get the color of green that makes you smile! Then you are going to fold the whipped heavy cream into the mixture until it is well blended.
At this point, you are ready to pour the mixture into the Oreo cookie crust. Carefully place the entire pie into the freezer, and set your timer for 90 minutes. After an hour and a half, check on your pie and place a few Junior Mints on top of it for decoration. Then stick the pie back into the freezer for at least another two hours.
Once the pie is well frozen, it’s ready to eat!
