Fall is in the air… yes, imagine me doing the Mommy happy dance right now! I am thrilled because, honestly, Summer is NOT my favorite season. I hate heat and humidity, which is somewhat cruel and ironic for a native Atlantan! There are so many wonderful things about the beginning of the cooler months, like all of the wonderful and hearty recipes that are perfect for this season. Today I’m going to tell you one of my favorite, fast and easy slow cooker/crockpot dinners. It is much like my Heavenly Chicken recipe, in that you can basically dump the ingredients and move on, with the exception of the last step! I love that when I’m busy or out of ideas. I found that Progresso Chicken Pot Pie “Rich and Hearty” Soup is an excellent base for this recipe.
- 2 Cans of Progresso Chicken Pot Pie Soup
- 1/2 – 1 Cup of Mixed Frozen Vegetables (This is to taste, some people don’t like a veggie filled chicken and dumplings, if that’s you, just skip this step, and realize that there are some veggies in the soup already!)
- 1 Pound of Boneless, Skinless Chicken Breasts (or Thighs) cut into small cubes (I prefer small cubes, but this should be done to taste)
- 4 Refrigerated, Prepared Biscuits cut into 6 pieces each
This is so ridiculously easy! Cut your chicken into pieces that are the right size for your family. We cut them smaller. Toss them into the slow cooker. Open the two cans of Progresso Chicken Pot Pie soup, and pour into your slow cooker. If you are adding vegetables like I do, measure out the right amount and add them to the slow cooker. Set the slow cooker for 6 hours on low. When there is an hour left, cut up the refrigerated biscuits, toss them into the slow cooker, and stir. Then after the remaining hour, serve up in a bowl!
That’s it! Isn’t it easy? It is one of my go-to meals when I am in a big hurry. And let’s be honest, when is a mom not in a huge hurry?
