As you may remember, we like avocados around here (see here and here for a couple of my Avocado related posts). I’m not a huge spicy food fan, but I do like my very Americanized Mexican recipes. (The Big One and the Mellow Man like more authentic Mexican food, but I’m kind of a wimp!) I’ve seen a lot of great Fish Taco recipes, but I wanted to find one that was easy to make and super tasty. Using pre-prepared Taco seasoning and supplies (I used Old El Paso brand), I have the yummiest recipe for Fish and Avocado Tacos. I know I have a winner when all of the “big people” in my house come back for seconds! (I actually had three!)
This particular recipe is based off of one that I found at AllRecipes, and I used the Taco Kit from Old El Paso for my seasoning and tortillas. Besides the seasoned fish, and fresh avocado, I made a red cabbage-lime slaw to go with the fish instead of lettuce.
- 1 Tbsp Olive Oil
- 1 Pound Tilapia Fillets
- 1 Tbsp Lime Juice
- 2 Tbsp Taco Seasoning (I used the packet included in the Old El Paso Taco kit )
- 2 1/2 Cups finely shredded red cabbage
- 2 Tbsp Sour Cream
- 2 Tbsp Mayonaise
- 1 Tbsp Apple Cider Vinegar
- 2 Tsp Lime Juice
- 1/2 Tsp Fresh Lime Zest
- 1/2 Tsp Salt
- 1 1/2 Tsp White Sugar
- 1 Tsp Cumin
- 1 1/2 Chopped Fresh Cilantro (Optional)
- 1 Tsp Hot Sauce (Optional)
- 1 Chopped Fresh Avocado
- 2 Medium Chopped Tomatoes
- Flour Tortillas (I used those that came with the Old El Paso Taco Kit and also bought a second package of them.)
In a bowl put your fish, and coat it with the taco seasoning and lime juice. Cook your fish last. (I’m starting with the best recommendation for the tastiest tacos. Wait until the end, so everything is warm and crispy! It only takes a few minutes to cook the fish.)
Finely chop your cabbage. I used a food processor but perhaps you have a finer hand for chopping than I. Then add your sour cream, mayonnaise, lime zest, lime juice, vinegar, sugar, salt, and cumin. If you’d like to add the cilantro and hot sauce, go ahead and add it now. The set the slaw aside in the fridge.
Chop your tomato and avocado, and set aside.
Now it’s time to cook the fish. Place in a skillet with your olive oil and allow to cook over medium heat. It will only take 10 minutes for everything to cook. I put the tortillas in to warm about this time. Once the fish is throughly cooked, I roughly chopped it into large chunky flakes.
Bring out the slaw, and create a flavorful taco filled with warm fish and cool avocados along with red cabbage slaw and fresh tomatoes! Delicious!
