Key Lime Poke Cake

Poke cakes are so great to make because the entire family can get involved.  There is something about a sheet cake that makes it much more achievable for baking with little boys. Right now my preschooler, the Monkey, loves to “help” whenever I decide to cook, so I try to pick recipes that help won’t mess up.  The Mellow Man loves pie, more than cake, and his favorite is Key Lime Pie, so I decided to make Key Lime Poke Cake.  The recipe is originally from Betty Crocker, but I decided that I wanted to change things up a bit.   It ended up being amazing.  It tastes exactly like Key Lime Pie, but with a cake base.  I was so impressed by the poke cake that I couldn’t wait to share it!

Key Lime Poke Cake Ingredients

Cake Base

  • 1 Box Yellow Cake Mix
  • 1 Cup Milk (higher the fat, the richer the cake)
  • 1 Teaspoon Lemon Extract
  • 1 Stick (1/2 cup) Unsalted butter, softened.
  • 3 Large Eggs

Filling

  • 1 Can of Sweetened Condensed Milk
  • 3/4 Cup Heavy Whipping Cream
  • 1/2 of Lime Juice (ends up being approximately 4-5 medium limes)
  • 1 1/2 teaspoons lime zest
  • 4 Drops Green Food Coloring
  • 4 Drops Yellow Food Coloring

Frosting

  • 3 Cups Heavy Whipping Cream
  • 1 1/2 Cups Powdered Sugar, Sifted
  • 1 teaspoon Lemon Extract
  • 1 teaspoon fresh lime zest

Directions for Key Lime Poke Cake

Start by mixing up your cake mix, eggs, lemon extract and butter.  I used my standard, slightly doctored yellow cake base but instead of vanilla extract, I used lemon extract.  Lime extract would work beautifully if you have it.  Pour the cake into a large pyrex dish (affiliate), or something similar.  Remember this is a sheet cake!  Cook in the oven, following the instructions on the cake box usually, 350 degrees for about 30 minutes.

When the cake comes out of the oven allow it to cool completely.  Then you get to “poke” holes in the cake with the handle of a spoon or spatula, so the filling will go into the cake.  This is another step that is awesome for little helpers!  The Monkey was very excited about being responsible for this step.

Remember, make sure the cake is cooled.  If you are in a rush– stick it in the fridge.  Make the filling while it cools, but don’t pour it on top of the cake until it is cooled.

All you have to do is add the whipped cream, sweetened condensed milk, lime juice, zest and food coloring.  I shared the amount we used because we wanted it to look like the green of our key lime pie recipe.

Let that soak into the cake and all of the holes that your helpers created.  While it’s settling, make the whipped cream frosting.  I selected a whipped cream frosting because I didn’t want something overpowering like buttercream.

Whipped cream frosting is so easy to make.  Start by pouring your whipping cream into your bowl (or standing mixer, like I use), and whisk it at a medium speed.  Slowly add in your powdered sugar, and it will thicken and develop a frosting-like consistency.  Then add in your extract.  Don’t make it too stiff, as you want to be able to spread it.  This should only take five to seven minutes.  Then all that’s left is spreading it on top of the cake.  Once it’s on the cake, sprinkle your lime zest on top of your Key Lime Poke Cake.  And it’s done!

Key Lime Poke Cake

Ingredients

  • Cake:
  • 1 Yellow Cake Mix
  • 1 Cup Milk (higher fat, the richer the cake)
  • 1 Stick (1/2 Cup) Unsalted Butter
  • 1 tsp Lemon Extract
  • 3 Eggs
  • Filling:
  • 1 Can (14oz) Sweetened, Condensed Milk
  • 3/4 Cup Heavy (Whipping) Cream
  • 1/2 Lime Juice (approximately 4-5 medium limes needed)
  • 1 1/2 Fresh Lime Zest
  • Frosting:
  • 3 Cups Heavy Whipping Cream
  • 1 1/2 Cups Powdered Sugar, Sifted
  • 1 teaspoon Lemon Extract
  • 1 teaspoon fresh lime zest

Instructions

  1. Mix cake mix, milk, butter, eggs and lemon extract, and pour into a sheet pan, cooking at 350 for approximately 30 minutes.
  2. Allow the cake to cool completely before poke holes in cake.
  3. Mix condensed, sweetened milk, whipping cream, lime juice, zest and food coloring together, and pour over the top of the cake, allowing it to settle into the holes.
  4. Whip cream and slowly add powdered sugar and lemon extract until a consistency of frosting. Spread on top of the filling and sprinkle zest on top of frosting.
