Key Lime Poke Cake

Poke cakes are so great to make because the entire family can get involved.  There is something about a sheet cake that makes it much more achievable for baking with little boys. Right now my preschooler, the Monkey, loves to “help” whenever I decide to cook, so I try to pick recipes that help won’t mess up.  The Mellow Man loves pie, more than cake, and his favorite is Key Lime Pie, so I decided to make Key Lime Poke Cake.  The recipe is originally from Betty Crocker, but I decided that I wanted to change things up a bit.   It ended up being amazing.  It tastes exactly like Key Lime Pie, but with a cake base.  I was so impressed by the poke cake that I couldn’t wait to share it!

Here's a cake that's easy to make and tastes just like key lime pie! Whip up this Key Lime Poke cake in record time, and enjoy!

Slow Cooker Chicken and Dressing

I’m honestly a fan of making my own dressing or stuffing with Bell’s Seasoning and slightly stale artisan bread, but that type of stuffing isn’t something that I’m up for on the typical week night. Particularly after the holiday season.  However, pre-packaged stuffing and dressing can be an awesome addition to your slow cooker when you want some of the flavors of a holiday dinner without all of the work that comes with cooking turkey.  This recipe for slow cooker chicken and dressing could be made with turkey, if you really were craving those Thanksgiving flavors.  However, it also works as a great, easy slow cooker meal when you are looking for something easy to make for you family.Looking for an easy dinner idea that has the flavors of Thanksgiving without all of the work? Hibachi Style Chicken Fried Rice

I have a weakness for Hibachi restaurants.  I don’t think that I ever tire of them.  When the Monkey was a month old, we took the entire family to hibachi to celebrate the Big One’s 10th birthday.  Lots of fond memories and family celebrations have happened at hibachi restaurants.  I love getting fried rice when we go, and I’ve finally learned how to make at home hibachi style chicken fried rice that is just as tasty and satisfying as any I’ve eaten at a restaurant.  Plus, it is an easy weekday dinner idea and makes a ton, so the Big One’s gigantic appetite will be fully satisfied.

Warm Crab and Artichoke Dip

We aren’t big football people around here. Nope, we tend to watch basketball theses days.  However, football is pretty exciting around Atlanta this year since the Atlanta Falcons are headed to the Superbowl.  The Big One has been talking about what he wants to do for the Big Game, and given the amount that he eats, ultimately that turns back to the menu.  I love warm Crab and Artichoke dip, particularly when I’m going out to eat.  However, I thought it would be a great and easy recipe to make for a tasty game day appetizer, so I worked on creating the perfect recipe for warm crab and artichoke dip.  It is so yummy that you can basically eat it out of the bowl with a spoon!
