I’m honestly a fan of making my own dressing or stuffing with Bell’s Seasoning and slightly stale artisan bread, but that type of stuffing isn’t something that I’m up for on the typical week night. Hibachi Style Chicken Fried Rice

I have a weakness for Hibachi restaurants.  I don’t think that I ever tire of them.  When the Monkey was a month old, we took the entire family to hibachi to celebrate the Big One’s 10th birthday.  Lots of fond memories and family celebrations have happened at hibachi restaurants.  I love getting fried rice when we go, and I’ve finally learned how to make at home hibachi style chicken fried rice that is just as tasty and satisfying as any I’ve eaten at a restaurant.  Plus, it is an easy weekday dinner idea and makes a ton, so the Big One’s gigantic appetite will be fully satisfied.

Homemade Mongolian Beef Recipe

There’s a Chinese restaurant near our house that I have been going to for as long as I can remember. Come to think of it, I probably had a birthday party or two there when I was a young child. I love their Mongolian Beef, and even if I’m getting another favorite entree, we always get an order of it because the Mellow Man and the Big One love it too. Several months ago, the Mellow Man decided to learn how to make his own Mongolian Beef.  (As you may recall, he likes cooking too!)He’s perfected and finalized his recipe, and I think that it’s finally ready to share with you. I’m not sure that it’s quicker than take out, but we are now able to have tasty homemade Mongolian Beef any night of the week without having to wait for our take-out order.

Light Ginger Soy Sauce Salmon

So I turned 40 about two months ago.  It finally happened, and there wasn’t a lot that I could do about it, but try to do it with grace… and health!  (And some amazing help from Artisan Plastic Surgery!) I have been doing so much better with working out (well, this past month has been a bust with travel, but up until that point…)  And then I started my first 21-Day Fix, and did really, really well! I lost 8 pounds and over 14 inches in 21 days.  I was so proud of myself!   I really liked the way the plan was focused on clean eating and the quality of the foods that you were consuming compared to other programs I had tried before.  This recipe is somewhat similar to my previous Salmon recipe, but made to be lighter and is a fresher, zestier flavor.

Jedo’s Traditional Beef Chili

There are certain things that you end up liking as a grown-up that you never imagined liking as a kid.  For example, when I was growing up, I hated pecans, mustard, sauerkraut, and chili.  My mother never made me eat everything, but she always asked me to taste “hated” foods each time they were served.  She said that my tastebuds might change.  Guess what!?  They did!  And now, one of my favorite fall recipes is Chili.  There are so many wonderful ways to make chili, but I learned how to make traditional beef chili from the Big One’s grandfather, who he called Jedo.   After having Jedo’s chili one night when we were visiting him, I had to learn how to make it myself.  It took a little while to learn the exact recipe– while it’s a traditional beef chili with beans and ground beef, Jedo made it without specific measurements, based on taste.  After a few years of practice, I’ve decided the seasoning proportions that work best for our family.  I’ve been trying to make sure that I got the ingredients just right before I shared it here.  I think it’s just about perfect now, so I’m delighted to share Jedo’s Traditional Beef Chili recipe with you today!

This is my son's grandfather's recipe for traditional beef chili with kidney beans and ground beef. The original recipe didn't have a complete ingredients list, but after years of practice and taking notes, I've finally can share this yummy and warming chili recipe with everyone! It's great for game day, freezes beautifully and tastes even better the next day! I can't wait to go grab a bowl!
