Key Lime Poke Cake

Poke cakes are so great to make because the entire family can get involved.  There is something about a sheet cake that makes it much more achievable for baking with little boys. Right now my preschooler, the Monkey, loves to “help” whenever I decide to cook, so I try to pick recipes that help won’t mess up.  The Mellow Man loves pie, more than cake, and his favorite is Key Lime Pie, so I decided to make Key Lime Poke Cake.  The recipe is originally from Betty Crocker, but I decided that I wanted to change things up a bit.   It ended up being amazing.  It tastes exactly like Key Lime Pie, but with a cake base.  I was so impressed by the poke cake that I couldn’t wait to share it!

The Best Southern Pecan Pie Recipe

Today I’m going to share with you the best, the very best Southern Pecan Pie recipe.  However, I have a confession to make– I don’t actually make this pie.  Mellow Man does.  For some reason, I’m not terribly good with baking pies.  They are a bit of a challenge for me.  I do better with a graham cracker crust, and frozen or creamy pies.  I’m not sure why.  Mellow Man makes me at least one pecan pie every year, and we haven’t always stuck with the same recipe.  However, after many taste tests, I know the recipe that I love best, so he sticks with that one.  Now, this recipe turns out to be the perfect Southern pecan pie– the texture and taste are exactly what you are looking for.  It’s ooey, and gooey, and so sweet.  I promise that when you are done making it, you’ll agree that it’s the best Southern Pecan Pie recipe out there.

Do you love pie? Southern Pecan Pie? I do, and this is, hands down, the best Southern pecan pie recipe that I have found, and I've tried many different recipes. None quite match the gooey texture and sweetness of this recipe. Can't wait for another slice!

Peppermint Cake Batter Cookie Blossoms

I love cake batter cookies that you make with store bought cake mixes. Do you? There are so many amazing recipes for them out there, and I’ve shared one of my favorite before with peanut butter and chocolate cake mix.  However, when I made those cookies, a commenter asked about making them with Andes Mint Candies, and that got me to thinking.  What if I made for my Christmas Cookie Exchange, Peppermint Cake Batter Cookie Blossoms that are like the traditional blossom cookies, but combine chocolate and mint.   When I found some darling holly leave and berry springs in the store, along with the peppermint Hershery Kisses, I knew what cookies that I wanted to make for the holidays– Peppermint Cake Batter Cookie Blossoms!
