Now the Big One isn’t much of a seafood eater– are your kiddos that way too?  He likes chicken, pork and beef, well, on most days, but seafood isn’t his preferred dish.  Mellow Man and I like to have fish now and again, and find those days that the Big One is away from home to be the perfect opportunities to have a little seafood. That means that fish is a relatively rare dish in our home.  Plus, Mellow Man and I like different kinds of fish.  I’m partial to the delicate, flaky white fishes like flounder and sole while he prefers the meatier, steakier fishes like Mahi Mahi, tuna and swordfish.  We both agree that this Ginger Honey Salmon recipe is very tasty.

My Mom Made That: Ginger Honey Salmon

I needed to find some tasty recipes to cook salmon, particularly on the grill.  I found one that I liked at All Recipes, and tinkered with it a bit (I always seem to!)  We both liked it, so I’ve made it a number of times now, so I thought I would share it here.

Ginger Honey Salmon:

  • 1/2 Tablespoon finely chopped fresh ginger
  • 2 cloves garlic
  • 1/3 cup soy sauce
  • 1/3 cup orange juice
  • 1/4 cup honey
  • 2 Green Onions minced finely
  • 1-2 lbs salmon filets

Mix marinade in small bowl.  Whisk thoroughly until honey is fully dissolved into marinade, it will take a minute or so, but you want everything to be well blended.  Pour over salmon filets in appropriate pyrex dish (or you can add everything to a gallon sized storage bag.  Let the salmon sit in the marinade for an 30 minutes or so, and then flip the salmon over to allow to marinade for another 30 minutes).  Cook on grill until the Salmon is done to your satisfaction, as some like it more well done than others!
