Our house is full of picky eaters kids.  Between the Monkey and the Big One, it can be hard to find a meal that everyone agrees on.  However, there are two ingredients that our family eats a lot of: cheese and chicken.  Since the Monkey is a vegetarian by his own choice, cheese is a great source of protein.  However, given how much we use these two ingredients, we need to have a lot of recipes that include both cheese and chicken.  Mexican recipes are a great place to start finding recipes with both.  One of the Mellow Man’s favorites that works great for the entire family is his Chicken Fajitas recipe.  It is something that the meat eaters can enjoy, but the meat is optional for my vegetarian Monkey.  Plus, you can add a variety of ingredients to really make the dish tailored to everyone in your family.  We include green peppers, lettuce, sour cream, avocado, cheese, salsa and beans as toppings for the family to choose from.  Today I thought I would share Mellow Man’s go-to Easy Chicken Fajitas Recipe that is perfect for your own #summerfiesta.  (This is one of the recipes that he always cooks for us! Don’t you love having a hubby who can cook?)

My Mom Made That: Easy Chicken Fajitas Recipe for your #SummerFiesta

Ingredients

  •  1 and 1/2 Pounds of Boneless, Skinless Chicken Breast, cut into strips (to save time, you can use the pre-cut strips if you’d like)
  • 1 Teaspoon Chili Powder
  • 1/2 Teaspoon Cumin
  • 1/2 Onion Powder
  • 1/4 Teaspoon Garlic Powder
  • 1 Tablespoon Cornstarch
  • 2-3 Teaspoons Lime Juice  (I like the kick of lime, so you can add more if you’d like.)
  • 1/4 Cup of Water
  • 4 Tablespoons of Canola or Olive Oil
  • 1 Green Bell Pepper, cut into strips
  • 1 Red Bell Pepper, cut into strips
  • 1 Sweet Onion, sliced
  • 1 Avocado from Mexico, sliced
  • 1/2 Cup (Or More) Shredded Cheddar Cheese
  • 1/2 Cup (Or More) Fresh Salsa
  • 1/2 Cup (Or More) Sour Cream
  • 1 Tomato, Diced
  • 1/2 Head of Iceberg Lettuce, finely chopped
  • Old El Paso Flour Tortillas

Directions

In a small bowl, mix the Chili Powder, Cumin, Onion Powder, Garlic Powder, Corn Start, 2 Tablespoons of Oil and the Water.  Pour the mixture into a bag (or dish if you’d rather), and add the chicken and all of your sliced veggies.  Coat the meat and veggies with the spice mixture, and set aside.  Now, if you don’t want to make your own seasoning, you can also buy the Old El Paso Fajitas Seasoning Mix.  That will save you 5-10 minutes preparation time.  (You can pick up a coupon to buy the packets here.)  We use our own mix because we always have those listed spices, so we can whip it up quickly if needs be; however, the prepared packets of Fajitas Seasoning Mix are a great way to make a great dinner even easier for your family.  If you’d like to do that instead, follow my directions, but rather than adding in the individual spices, just add the seasoning packet, plus the water, oil, meat and veggies!

Put 2 tablespoons of oil into a deep skillet and heat the skillet.  Once the oil is warm (i.e., the oil is as fluid as water and glistens), add the meat and the the veggies.  We always add the meat first because we want to make sure that it cooks for a bit longer and the veggies are crisp.  This doesn’t take very long, maybe 10 minutes for the meat and 5 minutes for the veggies.  Once the meat and and veggies are cooked, stir in the lime juice.  The lime really adds a nice kick to you recipe and makes it super summery!

Warm your Old El Paso tortillas in the oven while the meat is cooking on the skillet (careful if you cook them too long they get really crispy!)  Now, we have a debate in our house about the best size of tortillas.  The Little Monkey prefers the smaller ones, and they are great for adding cheese and sour cream, if you are two, and you don’t like meat.  The rest of us like the big “burrito” sized tortillas so that we can stuff all of the tasty ingredients into the fajitas.  The choice is yours.
