Tell me that I’m not the only mother out there who finds a family dinner challenging now that my kids are back in school? It is such a struggle for us.  It takes time to cook.  It takes time to clean up after dinner. It takes time to go to the store, and with the ages of our kids, it’s hard to find the time to gather around the table.  I’m always looking for delicious, nutritious, and easy solutions to our dinner challenges.  Recently I was having lunch at Panera while I was waiting for the Monkey to finish preschool, and I had their Turkey Avocado BLT sandwich.  It was delicious– so tasty and refreshing.  It was also so simple that I decided that I could make one myself.  However, since I like chicken in sandwiches a little better than turkey, I figured I would make a Chicken Avocado BLT Sandwich.  The results were just as tasty as the sandwich I had at Panera, and more importantly, the meal was so effortless to prepare.

This sandwich won’t take you very long to make at home, and all you need is kitchen sheers, 1 plate, 1 knife, 1 cooking sheet and 1 cutting board to prepare it.  For me, one of the must frustrating and time-consuming things about cooking is the clean-up after dinner.  There isn’t a lot of that with this meal.

The first thing I needed was a fresh Rotisserie Chicken from Walmart. I picked it up in the Deli section of the store, under the large sign for “Effortless Meals”.  The chicken was warm and ready to serve when I picked it up from the attendant behind the counter.  They also have a variety of sides, like cole slaw, macaroni salad and potato salad that are available for purchase as part of the effortless Rotisserie Chicken Meal.  Part of the Effortless Meal Rotisserie Chicken package is a 2 liter bottle of a Coca Cola product.  I just hopped over to the soft drink aisle, and grabbed a bottle of my current favorite beverage, Diet Coke .  While doing my shopping, I also picked up 2 long sourdough loaves, a tomato, an avocado and a package of bacon.

As I said, this meal required very little prep.  I first cooked the bacon using my 1 cookie sheet that I lined with tin aluminum foil (anyone else call it tin foil?).  Before placing the bacon on the sheet, I cut the pieces of bacon in half using my kitchen sheers.  For me, half of a piece of bacon is more “sandwich” sized, and it’s easier to correctly size them before they are cooked.

As an aside, cooking bacon in the oven means that it cooks much flatter than when I cook it on the skillet AND I can get it all done at once AND I can walk away from the oven.  All of these things make it even easier to prepare dinner!

While the bacon was cooking, I sliced up the avocado into thin, sandwich-sized slivers and cut the tomato. I also chunked the chicken breast from the top of the rotisserie chicken. Most importantly, I was able to nibble on the crispy rotisserie chicken skin and share a few morsels of it with Buster and Angus. (They were both sniffing furiously at my feet!)

I also sliced my sourdough bread, and prepped it for toasting. I did all of this with one plate for preparation, 1 cutting board, and 1 knife. See very little clean up so we could hit the road and head to after school events as soon as we ate dinner!

As soon as the bacon was crispy, I removed it, and the piece of tin foil from the cookie sheet, and placed the sourdough rolls in the oven, and let them toast for 8 minutes. Then I just had to build the sandwich.

To me, mayonnaise is an incredibly important part of a BLT, so it went on first, followed by the tomato, then the chicken, then the avocado, and then the bacon slices.

Put your sandwiches on the plates.  Pour your Diet Coke into glasses (for the adults), and serve milk in a sippy cup for the Monkey.  And in under 30 minutes, I was able to create a warm, delicious, nutritious meal for my entire family.  I’m learning that easy meals don’t have to be preprocessed or fast food!
