I’ve talked a lot about cooking chicken before– if you are interested in seeing some of my other recipes, here’s a popular one for the slow cooker, and here’s a chicken dish that you can make in a rush with just a few ingredients!  What I haven’t shared is one of Mellow Man’s all time favorites– Chicken Parmesan.  Before we were married, I had never cooked the dish, but I started making it after we went out to Italian restaurants a few times, and I saw him order Chicken Parmesan.  I wasn’t sure how challenging the recipe would be, and I generally made it up as I went along after I watched my wonderful Mother in Law make it for the Mellow Man.  It’s a very easy dish that you can make with veal or eggplant if you need some variety, so I consider it a good staple recipe for the home cook to know.  A lot of recipes out there call for making your own red sauce, but in reality, that can be the most time consuming aspect of the recipe. When you use good store bought marinara, you have a good home cooked meal while saving a lot of time.

My Mom Made That: Chicken Parmesan Recipe

Ingredients

  • 1 Jar of Mezzetta Marinara Sauce
  • 2-3 boneless, skinless chicken breasts, trimmed and cut in half
  • 1/2 of a Medium Sweet Onion, Coarsely Chopped
  • 1 Cup of Parmesan Cheese, finely grated and divided in 2 (Don’t use the shaker bottle, use fresh parmesan!)
  • 1 Cup Shredded Mozzarella Cheese
  • 1/2 Cup Italian Bread Crumbs (or add extra Italian Seasoning)
  • 1 teaspoon Seasoning Salt
  • 1 teaspoon Italian Seasoning
  • 1/4 teaspoon Black Pepper
  • 2 Eggs
  • 1 to 1-1/2 cups Extra Virgin Olive Oil
  • 3+ Cloves Garlic (add more if you like garlic!)

Directions

First gather your supplies: wax paper, a meat tenderizer, a medium Pyrex baking dish, a deep skillet and two shallow bowls.  I gently beat the eggs in a shallow bowl/dish.  Then I mixed 1/2 of the parmesan cheese, the bread crumbs, the seasoning salt, Italian seasoning, and black pepper in the second shallow bowl/dish.  I generally recommend that one uses the finest grating option for the parmesan cheese to make it similar in texture and thickness to the breadcrumbs.

Place the chicken between a large sheet of wax paper folded in half, and pound the chicken until it is approximately 1/4 inch thickness.  (Again, this is a bit of personal preference, if you like thicker chicken, skip this step, but know that it will take longer to cook, and the flavor won’t go through the entire piece of chicken.) Before coating the chicken, I take my chicken breasts and pat them dry with a paper towel.  This really seems to improve the coating!  Dredge each chicken breast that you have patted dry through the egg and then through the parmesan cheese/breadcrumb mixture.

I then heat the olive oil, and place at least 3 cloves of garlic in the oil to season it. Once it is hot enough– the oil shimmmers and droplets of water will sizzle in the oil, put your breaded cchicken breasts to brown, approximately 3 minutes each side. (They’ll be lightly brown when done.)

While the chicken is browning, I pour half of the Mezzetta Marinara sauce in the Pyrex dish and put the chopped onion on top of the sauce. When the chicken is browned, I place it in the sauce with onions. I then sprinkle the remaining Parmesan on top of the chicken, pour on the rest of the Mezzetta Marinara Sauce, so that all but the very tops of the chicken are surrounded by sauce. Finally I coat the tops of the chicken with the shredded mozzarella. We like a lot of cheese, but obviously, if you are not a cheesy Chicken Parm person, you can reduce the cheese.  Then you stick your dish in the oven for approximately 25 minutes at 300F.  It will be bubbly and delicious when done!
