Is there any food that you love that no one else in your house will eat? I bet there is. For me there are three foods— mushrooms, pickles and olives. I love olives. In fact, Kalamata olives are probably one of my favorite snack foods of all times, and my favorite pizza includes feta cheese, Kalamata olives, mushrooms and pepperoni. Sadly, no one else in my house enjoys olives. That just means more for me! Luckily, during the holiday season, I am able to make things that wouldn’t otherwise go over in my house because there are a lot of people in this world who do like olives (are you one?) As I said, my favorite type of olive is the Kalamata olive, which is a large, purple Greek olive.
Kalamata olives are my favorite part of a Greek salad, along with the feta cheese. I wondered why when there were so many different kinds of stuffed olives, but I didn’t see a flavor that captured the flavor of the Greek Salad. Thus, I decided to try my hand at stuffing my own Mezzetta Kalamata olives.

This is a very easy recipe to make, but you must buy Mezzetta pitted Kalamata olives. They need to be whole, and pitted. You also need to have a pastry bag and round tip. You also need soft goat cheese. Granted, I like Feta generally for that great Greek flavor, but goat cheese is much softer, making it easier to use with this recipe. There are so many different kinds of goat cheese as well, pick one that has the flavors that seem the most complementary to the olive flavor. I chose garlic herb goat cheese. Most stores also have plain goat cheese.
Place the roll of goat cheese in your pastry bag, and roll the bag on the counter to soften the cheese. First I poured the olives into a large bowl, and then drained the fluid. Then, I placed the tip of the round tip into one opening in the olive, and filled the olive with the goat cheese. That’s it– so, so easy. If you are like me, just make sure that you don’t eat too many, and save a few for your guests. I served my Mezzetta Kalamata stuffed olives with small bamboo toothpicks.
