Being a mom of a teen boy is hard.  I got home last night from running errands with the Big One, and the Mellow Man asked why I looked down, but some times, I’m totally befuddled about how to parent him.  He needs me.  He doesn’t need me.  He wants me to be there, but if I am, he’s embarrassed, so I’m always looking for something that we can do together.   I decided to shoot for a movie night with the Big One with a teen appropriate movie and some homemade snacks and popcorn.  We could hang out and have a “mommy-son date night,” just like we did when he was five.  We watched Goosebumps, and had Coca-Cola Cupcakes with M&M’S® and popcorn.  Coca-Cola cake is a traditional recipe made here in the South, and this particular cupcake recipe is a little like another cupcake recipe that I made a few months ago with soda.  This one uses a cake mix which is perfect for a date night with the big one because it makes baking quick and easy!

I ran over to my local Walmart to pick up all of my baking supplies including Orville Redenbacher 6 pack Movie Theater Popcorn, Diet Coke (for me), Coca-Cola for the cupcakes, and M&M’S® (that were in the cute little containers by the register).
Make It a Movie Night Shopping CollageCoca-Cola cake is chocolatey, but it’s not.  What I mean by that is– he has cocoa powder, but if you are a diehard chocoholic, it’s not going to be rich enough for you.  Never fear though!  When topped with fudge frosting, the cupcakes are a rich and delicious dessert.  I found a variant of this recipe in my favorite cake mix cookbook– The Cake Mix Doctor.

Cake Ingredients

  • Box of White Cake Mix (Yes, use white cake mix, not chocolate!)
  • 5 Tbsp Unsweetened Cocoa Powder
  • 1 Stick of Unsalted Butter, Melted (1 Stick = 8 Tablespoons)
  • 1 Cup of Coca-Cola
  • 1/2 Cup of Buttermilk
  • 2 Eggs
  • 1 Tsp Vanilla Extract
  • 1 1/2 Cups Marshmallow Fluff

Frosting Ingredients

  • 1 Stick of Unsalted Butter, Melted (1 Stick = 8 Tablespoons)
  • 4 Tbsp Unsweetened Cocoa Powder
  • 1/3 Cup Coca-Cola
  • 4 Cups Confectioners’ Sugar
  • 1 Cup Crushed Plain M&M’S®

Make It a Movie Night Cooking Collage

Pre-heat oven to 375 degrees.  Add melted butter, cake mix, cocoa powder, Coca-Cola, and buttermilk to your mixer, and mix slowly.  Then add the 2 eggs, vanilla extract, and continue to mix.  Finally slowly mix in the Marshmallow fluff.  The cake mix will be a very pale brown– it is not going to look like a deep fudge cake.  (Because it’s not!)  The recipe will make 22-24 cupcakes depending on how full the cupcake liners are.  Cook the cupcakes for 22 minutes at 375 and then turn down to 250 degrees for 5-6 minutes.  When done, the cupcakes will be a light brown and spring back when pressed.  Set the cupcakes aside and let cool fully before you frost them!

To make the frosting, crush a cup of M&M’S® into large coarse pieces, set aside.  Melt the butter in a small pan, once it is thoroughly melted, add in the cocoa powder and Coca-Cola.  Whisk until the mixture comes to a boil.  Remove from the heat and slowly whisk in the confectioners’ sugar.  Then use your hand mixer to mix well.  Pour in the crushed M&M’S® with a spatula, and then spread thickly onto your cupcakes.  This frosting isn’t light like a buttercream, rather it’s much more like a thin fudge.
